For the Boys!! Tasty Cupcakes

     For Jayden's birthday I decided to make cupcakes instead of a cake.  I looked around and decided to make them from scratch, not a box.  I found a really cool book that I bought on Amazon.  Its called the big book of cupcakes.  I love this book.  It has so many recipes for cupcakes, frosting, and decorating ideas.  Another great thing is that it shares how to make cupcakes from scratch or how to use a box mix for making a variety of cupcakes. 
     For Jayden's birthday he wanted chocolate and yellow cupcakes.  I think it was because they were on adjacent pages.. lol!  Anyway I opted to make it myself and not use a box.  We made a dozen yellow cupcakes and a dozen chocolate cupcakes.  We took the rest of the two mixes and put them in a giant cupcake silicone pan and swirled it.  We then made vanilla butter cream frosting.  I added some mini chocolate chips to the top and they were perfect. 
     The cupcakes turned out so yummy!  I am excited to try some other cupcake varieties like red velvet cupcakes, chocolate chip cheesecake swirl cupcakes, snickerdoodle cupcakes, and chocolate moose cupcakes.  The frostings all sound great too like, peanut butter butter cream, fluffy peppermint, and cream cheese.  yum.. makes me want some now.

Anyway I though I might leave you a recipe from the book.  But since I did the simple yellow and chocolate I didn't want to give you one of them, I wanted to put something better.. so how about the

Double Chocolate Peanut Butter Cupcakes:

3/4 c. Sugar
3 Tbsp. Creamy Peanut Butter
1/4 c. fat free sour cream
1 egg
1 egg white
1 c. flour
1/4 c. unsweetened baking cocoa
1/2 c. hot water
1/2 tsp. baking soda
1/4 c. miniature semisweet chocolate chips
Powdered sugar, if desired

1.  Heat oven to 350F.  Place paper baking cup in each of 12 regular size muffin pan.
2. In large bowl, beat granulated sugar, peanut butter, sour cream, egg, and egg white with electric mixer on medium speed until well blended.  Beating remaining ingredients except powdered sugar on low speed just until mixed. 
3. Divide batter evenly among muffin cups.
4. Bake 15 to 20 minutes or until toothpick inserted in the center of cupcake comes out clean. Remove cupcakes from pan; place on cooling rack to cool.  Sprinkle tops with powdered sugar.

Makes 12 cupcakes, prep time: 20 minutes, start to finish: 1 hour 10 minutes

You can also use a cake mix:
Substitute 1 box devil's food cake mix.  Make cake mix as directed on the box for cupcakes except - use 1 1/4 c. water, 3/4 c. creamy peanut butter, 1/4 c. vegetable oil, 3 eggs and add 1/2 c. miniature semisweet chocolate chips.  Bake as directed on the box.  makes 24 cupcakes.
